Troy and I were thinking about it the other day and we realized we are constantly on the go! We absolutely love traveling and seeing family and having family visit but we also appreciate the times where we can just relax and enjoy each others company!
So this particular weekend we were able to do just that and do some activities that we really like doing!
The first thing we did was take Mr. Apollo on a much needed walk. He absolutely LOVES taking walks and there is a creek on our walk that he looks forward to playing in and cooling off.

As most of you know I love photography. So I took advantage of some beautiful weather and took some fun shots.



Earlier that day we had done some shopping at the mall because we had some remaining gift cards from our wedding that have been burning holes in my wallet! One of which was to William Sonoma. The last time we had been there we saw this amazing pan that looked like it would be a really fun date night to experiment with! So here are our first attempts at Ebelskivers aka filled pancakes :)
First we made the batter which involved the separating of eggs which is always interesting :) It ends up being very similar to pancake batter but is a lot puffier once you add the stiffened egg whites.
Then you fill each well with about a tablespoon of batter.
Once you go around and fill the wells you then take your filling and plop (very official culinary term) on top of the batter. Once you have gone around with the filling then you go back around and add another tablespoon of batter!
You let them sit for another 30 seconds or so just to make sure the bottom has a firm shell, you take chopsticks from your local favorite Chinese restaurant (or these expensive chopstick like tools from William Sonoma) and flip them. Simple as that!
We have thoroughly enjoyed experimenting with different fillings ranging from strawberry jam to Nutella to eggs cheese and bacon! If you want a fun activity to do with your special someone or with your kids its received two thumbs up from the Kossick kitchen!

That is a very cool investment you got there! And I'm impressed that your gift cards made it this long. I think all of ours was gone withing two months!
